Once you find a tried and true formula, sales are practically guaranteed provided there aren't any catastrophic screw ups. The best way to minimize risk is to know your target audience, and focus most of your resources on delivering the goods to that target audience whatever they may be. As expensive as AAA games can be to make, studios risk bankruptcy and going out of business each time one is developed, or at the very least, massive job cuts if the game doesn't sell as well as projected.
